Spinach Lentil Soup

 

Ingredients

  • 3 cans lentil beans rinsed and drained or about 2 cups dry lentil beans*

  • 6 oz baby spinach

  • 1.3 oz raw celery or carrots

  • 3 tsp fresh garlic

  • 3 tsp chopped raw onion

  • 6 tsp spices  (2 tsp cumin, 2 tsp thyme, 1 tsp coriander, ½ tsp salt, ½ tsp pepper) Can substitute any/all spices

  • 6 oz water or if using dry lentils, 3 to 1 ratio of broth/liquid to lentils

  • 6 tsp extra virgin olive oil

Directions (Crockpot):

*If using dry lentil beans, the water/liquid to lentil ratio is 3 to 1. 

Add all ingredients to Crockpot and cook on low for 4 to 6 hours. 

Serving size: 1 cup
