Low Carb Tuna Salad

 

Ingredients

  • 1 can tuna (packed in water)

  • 4 oz. Cottage cheese (low fat) 1%-2% fat

  • 1 serving bread and butter pickles diced with 1 TBSP pickle juice (Check pickle container for serving size)

  • Black pepper to taste (optional)

Directions:

Drain can of tuna well.

Transfer to a bowl and separate into flakes with a fork. 

Add cottage cheese, pickles, pickle juice and black pepper.

Stir well with a fork and refrigerate. 

Serve cold in a lettuce wrap, over greens, on a wrap, sandwich or just eat with a spoon.

Makes 1 serving.
