Mac N Cheese

Ingredients

  • 2 cups  low fat cottage cheese ( 1% or 2% ) 

  • ½ cup unsweetened almond milk

  • ¼ cup grated part-skim mozzarella 

  • ¼ cup grated parmesan cheese, plus more for garnish 

  • 4 cups cooked elbow pasta ( 2 oz dry pasta = 1 cup cooked)

  • ¼ cup pasta cooking water, plus more if needed 

  • 1 tsp. Garlic  powder (optional)

  • Salt and pepper, to taste (optional)

Directions:

Combine the cottage cheese and milk in a food processor or blender and blend until smooth.

Transfer cheese  mixture to a pot and warm over medium- low heat. When the cottage cheese  mixture is hot, stir in the mozzarella, Parmesan cheese, cooked pasta, and pasta water.

SERVING SUGGESTION

Serve with chicken or chicken sausage on the side or mix in with the Mac n cheese.  Add a side salad for a complete meal.
