Avocado Chicken Salad

 

Ingredients

  • 6 oz shredded chicken 

  • ¼ cup plain Greek yogurt (1% to 2% fat)

  • ¾ cup (100G) mashed avocado 

  • ¼ cup diced red onion 

  • Juice from 1 lime

  • ⅛ tsp garlic salt 

  • ⅛ tsp paprika 

  • ⅛ tsp pepper :

Directions:

Cook, broil or bake boneless skinless chicken breasts

Let chicken cool, then shred with 2 forks

Stir together all ingredients, except the chicken 

Mix in shredded chicken 

Serve in avocado shells or spoon filling into lettuce leaves

Serving size: 1 cup
